New Year Resolution the Atkins way

Pumpkin pie Cheesecake Mousse


I know it has been awhile since my last blog posting what can I say those holidays keep a woman busy! of course this time I am doing my baking a little differently more like a New Year Resolution. So my husband and I recently started the Atkins Diet, yes the Atkins diet no carbs, and no sugars diet really all protein. Let me tell you it was seriously hard the first week I had sugar withdraws, and very fatigue. I never realized how addicted I was to sugar until I started this diet, made me  realize things needed to be changed  health wise. Sugar is really a bad habit to have and I have learned a lot of what sugar can do to the body and your brain.  Of course that is not to say I will not stop baking cause I love to bake for others, but for my husband and I just will be a little different.

I had no idea where to begin what to make for dessert the Atkins way since no sugar can be used , more like substitutes needed to be replaced. I came across this awesome dessert for the Atkins diet. It is called the low carb pumpkin cheese cake mousse Courtesy of the website . Pretty easy to make and only takes like 5 minutes to put together.  If you like Mousse, and Cheese cake then this is the dessert for you, now it is hard to get use to the substitute sugar, but if you are willing to be healthy then go for it.

Low Carb Pumpkin Cheese Cake Mousse


2-8 ounces packages cream cheese

1-15 ounce can of pure pumpkin puree not pumpkin pie filling

2 cups of heavy cream

2 teaspoons of pumpkin pie spice ( however I love a lot of spice so you may need taste test this while whipping up the Mousse)

1 teaspoon of sweet leaf sweet drops

1 teaspoon vanilla extract



In a Kitchen aid or a stand mixer blend cream cheese, and pumpkin until smooth. Add the rest of the ingredients and blend until whipped and fluffy for 5 minutes or until you see it fluffy. Taste and adjust sweetener to your liking if needed.

Keep Refrigerated until ready to serve.


Sugar 1.2 grams

carbohydrates 3.7 grams

fiber 1.5 grams

protein 3.5 grams

Serves 12

serving size 12 cup
